homemade hot pockets

Yumm- I decided now is the time for freezer meals- when it is still cool outside and I want to use my oven and when I am in my 2nd trimester and feeling great! Also- we got 500 lbs of free wheat from a lady on KSL that wanted to get rid of it :) so I am using lots of wheat flour lately! (and will be for the next 10 years!)


homemade hot pockets-

first I made pizza dough- the 15 minute recipe I have a link to on the top right corner of my blog! (I used half white half wheat flour)

Then I rolled it out into rectangles- I did it as thin as I could before it started ripping since I don't like a ton of bread.

Then I put sliced mozzarella (I'm sure it would be better with cheddar but we are trying to do low-fat around here), two slices of lunch meat ham, and some chopped cooked broccoli.

Then I rolled it like a burrito- ends first then pinched the two sides together.

Then I baked it on 425 for 20 mins and I'll have half for us now and put half in a ziplock to pull out one at a time and microwave for 2 mins later.


Yumm even Beth liked them- here she is signing "more"!! I sure do love her... here is a bonus pic of her- she loves going outside so much that when it's too cold she can just sit there looking outside and waving :)

I love these bits of updates. I was waiting for them for weeks and then I missed them! That beth is a darling!!!!! Go you with yummy freezer meals!
