I've wrapped everything in lettuce lately- this sandwich has a pita holding the homemade black bean burger since it was so crumbly and avocado but pitas don't hold all the lettuce and tomato I want so I just wrap up the pita in veggies!
I eat black bean burgers on sandwiches, pitas, and tortillas. I just dump in canned or homemade black beans, add some rice (I use brown) to help it stick together and a spicy pepper from my garden that I froze. Then I'll add a few veggies- this time I did a handful of kale and 2 carrots. I puréed it in my food processor and it came out a little thicker than pancake batter. Then I bake them for about 30 mins on each side on cookie sheets on 350. If you try to flip them too early they just break. I've done them on my skillet also but it takes a long time on there too. The first few times I made them I would add an egg or two to help them stick together but now I don't since eggs aren't real wonderful for us. :)
Ps This has no salt or oil so you may have to add mayo or ketchup. After 6 months of eating them I finally don't have to add it- my body is finally getting used to less salt and oil!
If its not too spicy I'll even put one of these in Beth's quesadillas as the "refried beans" and I'll feel super cool because then my child is eating kale (albeit a tiny amount!)
